Delectable Dates: Granita at State Bird Provisions

With the much anticipated re-opening of State Bird Provisions in the Western Addition this weekend, you might find yourself waiting for longer than just the expected 3 hours on a Tuesday. Instead, grab a friend and put your name down, eat elsewhere and come back just in time for dessert: the granita that will pretty much change your life.

If you are lucky enough to land some table room, indulge in the apple vanilla bean granita, a fresh but decadent confection. The fine, frozen granules of granita sit atop light crème fraiche tapioca, sprinkled with whole pomegranate seeds and fennel. The dessert is served in a mason jar with a mouth big enough for two spoons at once, so you and your companion don't have to fight over who gets the first bite. The dessert's ingredients change every three weeks, mixing different fruit and spice combinations including melon granita and milk tapioca paired with crystallized ginger and blackberries (pictured) and strawberry flavored granita topped with candied dates.

Paired well with shots of peanut milk, the agitated granita flakes will melt in your mouth with a small burst of flavor from the chew of crème fraiche tapioca and fruit. Not too sweet, but sure to make your taste buds dance, State Bird Provisions' granita dessert is perfect to share. It's good enough to eat standing up!
