Boccalone, chef Chris Cosentino's temple to the art of preserving pork with the simple motto of "Tasty Salted Pig Parts," offers a subscription service called the Salumi Society. Gift your red-blooded sweetie with a meat mystery box delivered to their door each month. Boccalone makes more than 20 different kinds of salumi and fresh sausages and will cram a box full of a different selection each time. Salumi include varieties like black truffle mortadella and the spicy, spreadable Nduja while the sausages range from breakfast and Italian to traditional blood sausage.
