S.F. Food Legend Jeremiah Tower's Kindle Quickie
Jeremiah Tower, the chef and former San Francisco restaurateur who left an indelible impression in molding "California cuisine" as a chef at Chez Panisse and with his Eighties restaurant Stars, has released a short e-book for Kindle. A Dash of Genius is ostensibly his ode to and a history of French culinary pioneer Auguste Escoffier (whose name now adorns a cooking school), but it also offers a lot of Tower's own cooking personality, with original recipes and adaptations of classic recipes made easier and more practical for the chef of the now.![]()

The charm of this narrative is also cultural as Tower details the high society reception Escoffier received during his reign up until his death in 1935. Escoffier was a celebrity chef long before the Food Network came around.
