Author Jeffrey Pilcher will be reading from and discussing his new book, Planet Taco: A Global History of Mexican Food. In it, Pilcher undergoes a comprehensive historical quest for the origins and evolution of the taco, tracing its development from casual street snack to a globally recognized fast food. He also dives into the sticky question of "authenticity," especially in a world of globalization.

Pilcher is an academic, and the book rather reads like a textbook (sample sentence: "These considerations of technological efficiency and gendered labor suggest the usefulness of approaching Mexican food from a commodity-chain analysis, with its comprehensive perspective on production, distribution and consumption" -- complete with a footnote at the end). But don't let that deter you. It's densely packed with information and is a fascinating read for anyone interested in the development of Mexican cuisine.
We can only wonder what Pilcher would make of the chicken-and-waffle taco.
