Drink in Art: Blue Bottle's Glittery Ice Cream Float at SFMOMA

Blue Bottle at SFMOMA elevates desserts to works of art by taking inspiration from the museum's exhibits and permanent collection (we wrote about the Mondrain cake and other treats back in 2009). For the next few months they're serving a fun Sherman Ice Cream Float topped with edible "disco glitter" ($6) inspired by a photograph in the new Cindy Sherman show.

Untitled No. 415 is a portrait of a clown wearing a floral-printed jacket, red pants, and a glittery silver bowler hat, clutching a bottle of light pink soda. Blue Bottle's pastry team set out to create a carnivalesque dessert that evoked the photograph in both taste and appearance. The float starts with a scoop each of Humphry Slocombe vanilla ice cream and raspberry sorbet to represent the clown's white makeup and maroon pants. (Humphry Slocombe made the raspberry sorbet specifically for Blue Bottle -- they tried strawberry, but it didn't have the right color or flavor profile.) The ice cream is then topped with a disc of edible glitter, which dissolves into a pretty, sparkling foam as seltzer is poured into the glass.

The float is served with a 2 oz. vial of house-made bubblegum syrup to pour in at your own discretion. They use classic Dubble Bubble to make it, and though the bubblegum flavor is definitely present, it's subtle enough to be enjoyable for adults as well as kids. Though we do recommend starting with a cautious pour and adding more to taste -- or even not adding it at all, and just enjoying a light, floral, and refreshing glass of modern art.

The ice cream float will be on the menu at Blue Bottle until the Cindy Sherman show closes on Oct. 8. And unless it's the first Tuesday of the month (free day), museum admission is required to access the cafe.
