Maison Bouche Finds a Good Use for Rhubarb

Maison Bouche, the very French-looking chocolatier from Berkeley, has recently issued a new dark chocolate bar that finally makes the best use of one of the current season's most perplexing offerings: Rhubarb.

It's a small but sumptuous product that pairs the stalk with its familiar foil, strawberry, and infuses the flavors into small bits of what tastes like candied orange peel, though the ingredients are listed as "rhubarb, strawberry, and orange flavors" so it's hard to know for sure.

Even though rhubarb is almost always used as a vehicle to sop up and provide a wider surface area for strawberry flavor, its inclusion in chocolate is a new frontier worth further exploration. Then again, we'd expect a candymaker with a name that roughly translates to house mouth to have an innate sense of what flavors combine well together. Find it at Miette Confiserie.
