Les Éléments Pâtisserie is the brainchild of Luis Villavelazquez, former pastry chef at Absinthe and current head chef and kitchen manager for La Victoria Bakery. The bakery is his outlet to really express his creativity, making simple treats like cookies shine.

His chocolate espresso cookie is big and chewy, with those beautiful crackled and flat areas that never seem possible to bake at home. Instead of chocolate chips, shards of espresso beans are scattered throughout, but they're tiny enough to keep the buzz in the background.
