Chad Robertson.
Every year, San Francisco-based puts together its Chow 13, profiles of 13 people whose influence has been felt across the world of food. This year, for example, Tartine's Chad Robertson made the list for selling amateur bakers on the romance of baking naturally leavened breads. The Web magazine also picked New York chef Eddie Huang, who has become a cult figure for his Young-Jeezy-quoting, F-bombed-out, awe-inspiring tweets and blog posts.

Something new, though: This year, instead of focusing solely on figures of the moment, the Chow team used the 13 profiles to trace back a number of dominant trends to their source. Tom Peters, who helped launch America's obsession with Belgian beer. David Tran, who invented Sriracha. And Philippe Starck, the designer who popularized the communal table. Now you know who to send thank you notes to -- or curse the next time you're stuck at one.
