Red Vespa, a Sweet/Tart Cocktail at Perbacco

​While she'll gladly make the million martinis and vodka drinks that customers constantly order, Perbacco bartender Carla Gassner is reveling in stone fruits and other ingredients with sweet and tart qualities for her additions to the current seasonal cocktail menu at this lauded Financial District Italian restaurant. If you belly up to the bar with the need for adventure to accompany your charcuterie plate, she might steer you toward the fleeting specials and, trust us, that's the way to go.

While we don't normally look for cherry flavors in a cocktail, it's probably because we hadn't yet sampled the drama in a glass that is Gassner's Red Vespa, a concoction of cherry rum, Lillet, Luxardo (maraschino liqueur), and lime. Brandied and fresh cherries loll at the bottom, waiting to unleash a few last potent punches of flavor.
