Fifth Floor bar manager Morgan Young channels the liveliness of peach Pop Rocks in her champagne cocktail Pebbles, but luckily she does it without mimicking the high-fructose zing of the candy. Orange curaçao, peach bitters, a grapefruit twist, and a sugar cube are married with Gloria Ferrer Rosé in an elegantly sweet-tart ceremony. Even if you can't try it tonight in honor of 2011, consider this a recommendation for an instant mood-improver. Happy New Year!
