Who: Trevor Easter

Background: Having honed his skills in San Diego, first in the Gaslamp nightclubs, then at Noble Experiment and El Dorado, Easter had the opportunity to train with Sam Ross of New York's famed Milk & Honey.

Why he made the list:
He has both speed and technique, but Easter cites giving patrons what they want as the thing he likes most about tending bar. "I love simple, straightforward cocktails that are accessible to the customer," he says. "I'm not into this to make the customer feel dumb, I'm here to give them exactly what they want, whether it's a drink they have had before or something they have never heard of."
