Who: Lauren Steele

Background: A protégé of Amanda Washington, Steele has spent time working as a cocktail waitress, barback, and bartender at a number of bars around town, including Rickhouse and Rosewood.

Why she made the list: Under Washington's tutelage, Steele is developing quickly, creating some unique variations on classic cocktails using Italian amaros (bitters). "You can make some incredibly delicious bucks, sours, and Manhattan variations with them," Steele says. "I would have to say, though, that I'm a sucker for any kind of sour."
