Meat Locker: Taylor Boetticher Takes Down a Pig at Bloodhound
We sometimes wonder if a 13th-century sage ever could have imagined that hog butchery might one day captivate the imaginations of citizens more than, say, puppet shows and bits of recited verse. We doubt it, but indeed in San Francisco circa 2010, demonstrations followed by feasts have become a brand of foodie-themed theater for the ravenous. The latest showing ― Meat Locker ― happens at Bloodhound next Tuesday, Aug. 24, beginning at 6 p.m., and features the Fatted Calf's Taylor Boetticher and a 150-pound Duroc-Landrace from Llano Seco Ranch. The cuts will be grilled following the demo and served, along with sides and a complimentary whiskey drink featuring Heaven Hill. This costs $45 a person, which by local standards isn't absurd. ![]()
