Paolo L. at Inside Scoop shares numerous ― like, ridiculously numerous ― details about Tony Gemignani's ambitious plans for expanding his Tony's Pizza Napoletana into the space next door (1556 Stockton). The pitch: The 750-square-foot addition will have a coal-fired oven and a RotoFlex oven, and will serve New York-style, Sicilian-style, and organic pizzas by the slice; Romana pizza by the meter; Chicago Italian beef sandwiches; New York deli sandwiches; Gino's Italian Ices; and some other stuff.
Paolo L. also announces that Absinthe's replacement for the just-departed Jaime Lauren is Adam Keough, last the executive chef of Michael Mina's Stonehill Tavern in Orange County.
Inside Scoop, clearly on a roll, also reports the imminent arrival of Hot Spud (2640 Mason, 399-1065, hotspudsf.com) on the Wharf. The pitch: Baked potato restaurant run by former raw-food chef, with sweet-potato desserts and potato-starch cutlery.
