We grew up in a family where meat in some form was the biggest slab of whatever appeared on the nightly dinner plate. Pork chops breaded and fried to a challenging state of stiffness, Swiss steak, sauerbraten in a sauce all grainy-sweet from crushed gingersnaps ― hell, even Spam. Nowadays we take animal foods more sparingly, respectfully, even, while accepting that we're too greedy or cavil to ever swing permanently vegan. Flesh is our destiny, but that doesn't mean we have to gnaw on just any old muscle.
