Prospect Cocktail Preview Tuesday at Beretta
Prospect, the highly anticipated restaurant and bar project from the talented Boulevard group due for The Infinity building at 300 Spear might not be open yet, but tomorrow you'll be able to catch an early buzz from some of its cocktails.

Prospect bar manager Brooke Arthur will be kicking off a new series of visiting bartender nights at Beretta by showcasing three drinks off her upcoming bar menu. No final word on which ones will make the cut, but Vicious Circle (an intriguing sounding combination of rye whiskey, pineapple gomme syrup, lemon juice, Zirbenz stone pine liqueur, and Drambuie) and Central City Cocktail (sherry, dry vermouth, pickled cherry juice, simple syrup, and orange bitters) might make it to the playlist.
Having designed her menu at Prospect to focus on imaginative whiskey and fortified wine-driven cocktails, tomorrow should offer a revealing preview of what's to come. Although you won't be able to sample Prospect chef Ravi Kapur's cooking along with the cocktails quite yet, you can still find him cooking most nights at Boulevard.
Beretta bar manager Ryan Fitzgerald hasn't firmed up details on the schedule for the remainder of the guest bartender series, but based on past appearances, it should be something special. The previous series brought us Seattle favorites Robert Rowland of Oliver's Twist and Anu Apte of Rob Roy, and New York bar star John Deragon of PDT (Please Don't Tell), with impressive results. Thank god Beretta serves a deliciously crisp margherita pizza with burrata (and the rest of full menu) until 1 a.m.
If you decide to check it out, expect the usual level of insanity early in the evening. A best bet is to come by for late drinks and food with the off-shift restaurant industry folks and Mission District characters.
