As a daily windup to the Weekly's Best of S.F. 2010 on May 19, we've teased out 92 of our favorite local dishes that taste like here. All the tasty details after the jump.
Suggesting that a Cantonese restaurant known for appealing to FiDi tastes makes the ideal Shanghai soup dumpling is heresy. Xiao long bao, for the uninitiated, are a fetishistic foodstuff on par with thin-crust pizza and artisanal chocolate. Among the obsessive, the dumplings have their own acronym ― XLB ― and if you Google it you'll read through hundreds of salvos in a 100 Years' War over who makes the best soup dumpling around the Pacific Rim. So we at SFoodie are treading dangerous ground here. Have we eaten at Din Tai Fung in Taipei? No we haven't, but we've traveled to places like Joe's Shanghai in New York and Chen's Shanghai Kitchen outside Vancouver to get our bearings. More importantly, we've eaten xiao long bao at almost every dumpling shop and dim sum place in San Francisco, and we still proclaim our love for Yank Sing's.
Yank Sing's XLB demonstrate their master dim sum chefs' prowess at crafting the thinnest, supplest, strongest dumpling skins, which they pinch and fold around Kurobuta pork, heavily laced with fat, and concentrated broth. In the steamer, the dumplings slump and spread. When you use your chopsticks to grip the top twist and lift the jiggly packet onto your soup spoon, you're sure it will burst. But it doesn't ― not until you lift it into your mouth. Only then does the skin break, the rich soup gush, the eyes widen. We've made our way through the entire steamer basket, and we swear: The surprise never grows old.
