And yes, 4505's deep-fried mac is a panko-crusted calorie bomb, and it is shaped with the rectilinear precision of an industrial food product. But in the hands of Ryan Farr, it's lighter and more delicate than you'd think. The outside: satisfying as the buttered toast crumbs left on your breakfast plate. The interior: creamy without skewing high-butterfat sticky, with a cheesiness that flavors without clotting. No joke.
