Its pulled-pork sibling pales by comparison.

Number 30: "Pulled" Lamb Sandwich from Wexler's

Chef Charlie Kleinman subverts nearly every expectation of the pulled sandwich. In place of the sauce-gooey clutch of shredded meat, the Wexler's version offers up soft, knife-cut segments of pale lamb, mixed with ghostly-looking wisps of watermelon rind pickle. The sauce? A Jolly Rancher-pink side of watermelon vinegar, a witty allusion, perhaps, to the vinegar-based moppin' sauce of the Carolinas. What's amazing, is that for all of Kleinman's conceptual jiggering, there's nothing forced about the sandwich at the end of it. The lamb offers up a delicious whiff of barnyard richness, subtly enhanced by the pickles' sweetness, making memories of even the most deftly handled pulled-pork specimen seem about as clumsy as a Sloppy Joe.

Wexler's 568 Sacramento (at Leidesdorff), 983-0102; sandwich available at lunch only
