As a daily windup to the Weekly's Best of S.F. 2010 on May 19, we've teased out 92 of our favorite local dishes that taste like here after the jump.

Number 27: The Cholle Bhature from Vik's Chaat Corner

If you've been to Vik's in West Berkeley for chaat and grocery shopping, you've marveled over the giant bhatura. Its possessor always parades through the crowd of tables like Salome gloating over the head of John the Baptist. The fried balloon of dough is bigger than the saint's head, its surface pebbly with air bubbles, and it looks like it might pop at the slightest poke. 

If you've dared to order one, you've paraded it back from the counter yourself, rushing a little to make sure it didn't deflate before your tablemates could marvel over it, too. And when you've gingerly made that first tear, steam has gushed out, forcing you to jerk your hand back to escape a burn.

Even more to your amazement, you've found that bhature doesn't deflate, even when you're halfway through it. And when you've swabbed a swatch of the fried bread through your bowl of coriander-spiced chickpeas and tamarind chutney, picking up a piece of pickle and some chopped onions on the way to your mouth, you've found that the bhatura is fried so quickly and skillfully that it hasn't soaked up a cup of oil. A marvel indeed.
