Japanese-Thai Fusion Bistro Morph Hoping to Launch Next Week

The sleek interior gives off more than a whiff of clubby.
​Call him "T." Not Mr. T, just T, something the co-owner of the soon-to-open restaurant Morph considers a manageable edit of a very long Thai name few in San Francisco could comfortably pronounce. T and his partners are in the final stages of transforming the former Watami space into a clubby, 49-seat Japanese-Thai fusion bistro with beer, wine ― maybe soju cocktails.

​"The concept is 'morph,' which means changing," T says. That means the shortish menu of 10 to 15 items should mutate with the seasons and with customers' tastes (monthly, more or less). "We want to see how people in the neighborhood are responding," T says. Think green curry served with salmon, deep-fried rice-paper salmon rolls with wasabi dip, sweet-spicy chicken. A former architect and Web designer, T is a restaurant novice, but Facebook photos suggest he's put his design training to particularly sleek effect.

As sleek, we daresay, as paring down a multi-letter name into a single consonant?
