I attended Chris Cosentino's first Head to Tail dinner seven years ago, and I still remember a magnificent beef-heart raviolo floating in a delicate oxtail broth; it was also the night I learned about Prather Ranch, now a household name (well, among the Bay Areans who spend 40% of their income on food). Next week, Head to Tail returns.
4. Erik Ellestad's blog post on the modifications that he needs to make to old cocktail recipes to make them palatable to today's drinkers has had me thinking. Is it time to stop beatifying turn-of-the-20th-century bartenders? Are today's tenders more sophisticated than their ornately mustichioed predecessors?
5. Bite o' the week: Actually, there have been three refrains haunting my brain the past few days ― Alex Chilton, Frito pie, and El Perol's pan con chicharron. Goddamn, was that a good sandwich.
