Maybe only the croissant has suffered more indignities than focaccia. From the square forced into duty as some teetery-topped hamburger bun, to the simultaneously dry and oily fingers offered up as bread, it's accrued a troubled reputation. Leave it to a doughnut shop to work some serious focaccia rehab. The daily slab at Dynamo has a dense, almost custard-soft texture, imagined as a platform for lush toppings like the greens, butternut squash, and globs of fontina pictured here.
