Number 45: Pan con Chicharron from El Perol

The pan con chicharron at El Perol, the Peruvian stall in the back of the Mission Market on Mission at 22nd St., contains all the markers of a perfect sandwich. A light, crusty, just-warmed French roll. Vegetables in the form of finely sliced onions and grilled sweet potatoes, cooked to the point where they're soft and sweet. Drizzles of a green chile-vinegar sauce to set it all off. And pork, of course ― slowly roasted, tender, fatty pork.

Pan con chicharron is a particular specialty of Lima (the Peruvian newspaper El Commercio has a Spanish-language video about Sarita, the renowned pan con chicharron shop). Chicharron doesn't quite mean the same thing in Peru that it does in Mexico. It's more like carnitas: a hunk of pork butt, slowly braised until the liquid cooks out and it's simmering in its own fat, then sliced and re-browned before being stuffed in the roll. Yes, you can taste the toasted fat in every bite. Like we said, it has all the markers of perfection.
