Number 43: Roast Duck from Cheung Hing

Depending on where your sympathies lie, a window display of rosewood-colored ducks, hooked through the neck, and haunches of bubbly-skinned pork could be a gruesome spectacle or a tantalizing reminder of why you love eating in San Francisco. There aren't many cities in the country where the Cantonese barbecue shops are as plentiful and good.

Take the roast duck from Cheung Hing: The skin is evenly lacquered in caramelized sugars, soy, and glistening fat, not some red-dyed, syrupy glaze. There's some subcutaneous fat around the thighs, but the skin is tissue-thin at the breast. Most importantly, the meat's so tender you'd think it was poached instead of roasted. Skip the container of duck sauce we photographed with this half-duck and ask the butcher who's chopping up the bird to pour an extra ladle of drippings overtop.
