How to Make Nacatamales, the Other Hot Pocket

​Not only did this week's review give me an excuse to eat queso frito over and over again ― even reading the words "fried cheese" makes the heart of any native Midwesterner swell ― it meant walking around the Mission sampling nacatamales. And then losing yet another afternoon to YouTube, which is well stocked with nacatamal-making videos filmed in both Nicaragua and the United States.

The best of the lot: In this video, produced by a group of missionaries working in Central America, a young woman translates nacatamal-making instructions into English; she's sweet but about as reliable as the subtitles on 1970s kung fu movies. This video of an outdoor nacatamal-making session may have you looking into airplane tickets to Managua. And the woman in the video below, whose directions are easy enough to understand if you took a few years of Spanish in high school, deserves her own cooking show.
