It might be impossible to cop a taste of him at the shuttered Poleng, but you can eat salad touched by the hand of Tim Luym at Urban Picnic, the FiDi lunch place where the chef served as consultant. Take the kale and quinoa salad: a fluffed-up mass of the grain, jumbled up with almonds, little pear tomatoes, satsuma mandarins, and a chiffonade of raw lacinato kale in dark-tasting sesame-soy vinaigrette (chicken or Hodo yuba optional). It's a delicious way to get your Luym fix and bulk up on intestinal fiber.
