Go all egghead over things like bloomy rinds.
Going back to school never sounded so tasty. The Cheese School of San Francisco (2155 Powell at Francisco) has a new slate of classes geared toward food service professionals and serious cheese enthusiasts alike. This blogger once attended a class at The Cheese School and found it appealing, without the kind of intimidation and windbag factors that can turn food and wine courses into terminally boring downers. At our class, there was little chance of going hungry -- the carefully thought out samples were plentiful. If you're seriously considering becoming a fromager, the school's three-day intensive program ($980) runs October 11-13. It promises to get participants ready "to procure, sell, care for, and serve premium cheeses." Certificate of completion, meals, and take home materials are included. There are also tasting tour classes, one-night affairs for $65 -- perfect if you only aim to master Cheese 101.
