San Francisco's Largest Holiday Sugar Castle

Categories: Sweet Beat
120220081477.jpgChef Jean François Houdré has created S.F.'s largest holiday sugar castle, a rotating fantasy creation that took more than 360 hours to make and comes complete with a working model train. It was fashioned with the help of 70 pounds of gingerbread, 130 pounds of pastillage (powdered sugar, egg whites, and gelatin dough), 40 pounds of pulled and bubble sugar, Royal icing made from 300 pounds of sugar and egg whites, 40 pounds of molasses, 60 pounds of flour, and 100 pounds of Christmas candy. It is on display through the holidays at the Westin St. Francis hotel (335 Powell). -- Tamara Palmer
