Brains And Eggs, The White Boy Boogie

Incanto's Chef Chris Cosentino, he of the jiggly beef tendons and raw liver venison has been honored in all his gut-loving offal-ness by band One Ring Zero (full disclosure: it's his brother-in-law's band), who made his recipe for brains and eggs -- affectionately known as the butcher's treat -- into a song, a kind of white-boy rap boogie, with Isaac Hayes-esque interludes for the directions. It defies description, so you'll just have to listen to it. Then, as Cosentino urges, "make yourself some dinner" -- or not. The best line for my money, simply because it's impossible to make it sound sing-songy:

"Gently place the brains into the water and simmer them for 5 minutes. Remove the brains from the water with a perforated spoon and place on a plate. Put the plate in the refrigerator to cool for about 15 minutes."
